The Christmas season is now over and somehow seems like it was quite a while ago. But at least in our house, we are still trying to preserve the spirit of this special time a little longer. I just do not want to return completely to everyday life, which for most of us started with the first real working week of the new year. The Christmas decorations have not yet been put away either and every now and then I can hear a Christmas carol echoing through our rooms.
And at the weekend, I also took the opportunity to take us back a few days in culinary terms. I spontaneously felt that it was time to bake a few more cookies. You don't really need a special reason to do this, but it's still something that we miss out on for the rest of the year.
Actually, there aren't many ingredients needed to bake cookies, but we didn't have any butter at home this time. After a bit of reflection, I replaced the butter completely with margarine, which somehow made the dough a bit softer and stickier. Rolling out the dough and cutting out the cookies was a little more difficult than expected, but we managed it in the end. I also kneaded some oat flakes into a few of the cookies, which I enjoyed last time as well. Raisins and almonds are also a good option for a change, unfortunately we didn't have any walnuts to hand.
Tastewise the cookies were not quite as yummy as the previous ones, which also contained butter. However, the cookies which contained some flakes tasted really good again.
Not all of them have been eaten yet, but that shouldn't take long. Let's see if we manage to roll out a cookie dough again in the near future and fire up the oven. I do have my doubts, but I would be delighted if we could make this baking fun a permanent thing....
